Stars & Stripes Cheesecake Popsicles

  I hope you all have enjoyed your Memorial Day. Memorial weekend harbors a lot of different emotions and feelings. Sadness for those we grieve, eagerness for kids to start summer and joy to spend time with friends and family. My parents instilled very patriotic values into our family, so for us Memorial Day weekend means paying respect to those who lost their lives fighting for our country and seeing those who matter most to us.

Cauliflower Feta Tabbouleh

If you would have told me five years ago that cauliflower would become a favorite vegetable, I would have thought, “no way!” Cauliflower was always the last vegetable I would eat in the pre-prepared vegetable trays from the grocery store. And it had to be submerged in ranch dressing.

Creamy Tomato-Basil Zoodles

 At the end of the day, one of my favorite dishes is a big pile of spaghetti with tomato sauce and mozzarella. With zucchini soon reaching their peak season, it’s an easy transition to make this dish healthier. Replace the spaghetti with freshly spiralized zucchini (aka “zoodles”). Add a little creaminess and fresh basil to really enhances the flavor. It has become one of my favorite dishes on rotation!

I Bought A House! | Before Pictures

Hello friends!!! I’m back! Whew after a crazy, busy month – I am back and bought a house!!

For as long as I can remember I have been wanting to own my own house. Having a yard with a patio and fire pit are just a few things I have been anticipating. You can’t beat BBQ and fresh ice cream on a sunny day outside. If you ask me, it’s part of the American dream!

Last month, I took my piggy bank, spilled it out and took the change to the bank – and now I have a little fixer upper house!
