At the end of the day, one of my favorite dishes is a big pile of spaghetti with tomato sauce and mozzarella. With zucchini soon reaching their peak season, it’s an easy transition to make this dish healthier. Replace the spaghetti with freshly spiralized zucchini (aka “zoodles”). Add a little creaminess and fresh basil to really enhances the flavor. It has become one of my favorite dishes on rotation!
This recipe goes out to my mom who mastered the original version of tater tot casserole while balancing with three kids pulling at her legs. (Big round of applause to all my mama friends!!) Life is crazy. Your food shouldn’t have to be.
For those who love lasagna – you know it’s really just spaghetti-flavored cake. The layers of cheesy goodness melting with the meat sauce….mmmm. Lasagna is usually my go-to entree at Italian restaurants because it always leave me in a state of blissful satisfaction. In order to eat lasagna more often, we replaced the noodles with zucchini. Let me tell you, coming from someone who eats/breathes/sleeps/dreams of their carbs, these lasagna zucchini boats are pretty delicious!!
Do you ever have a meal that you are still dreaming of the next day? That is how this dish was for me. Take several favorite foods – chicken, bacon, jalapenos, cheese – and coat it all with BBQ sauce as it cooks. Like jalapeño poppers taken to a new level. At the end of a cold, winter day, I often crave warm soup and comfort clothes. Lately I have loved French onion soup, largely for the fact I enjoy covering it with cheese covered baguette “croutons”. And (confession) eating a dozen cheesy croutons before I even sit down with my soup!
