Night time is my weakness when it comes to food. If it’s in my kitchen, it will be in my mouth. Chips, popcorn and ice cream will always lose the battle after 6pm. And if I work at the hospital that day – forget it. Some may think by my nighttime eating habits that I am going into hibernation. For a decade.

As a child, I remember my mom used to make cucumber salads as dinner side dishes. She would usually either marinate cucumber with olive oil, vinegar, onion slices and salt; or marinate cucumber during the day in ranch dressing and serve with fresh cracked pepper. Both methods were delicious. I still love fresh cucumber salads and enjoying trying different variations. Cucumber salads are easy, affordable and usually healthy. To mix things up a little bit, I’m making a southwestern version featuring avocado and tomatoes!

Cookie Dough Cupcakes

Way back in the day when I was in Physician Assistant school, I would occasionally bring homemade baked goods to share with the medical staff during my rotations. It was my way of thanking others for their help. Emergency medicine rotation received brownies, family medicine received sugar cookies, etc… The longer I did this the more I realized it was not just a “thank you” but also a better way for this quiet P.A. student to get to know the staff better. The day I baked these cookie dough cupcakes was the day I met everyone! They are sweet, rich, and incorporate a fan favorite – cookie dough.
