
If you would have told me five years ago that cauliflower would become a favorite vegetable, I would have thought, “no way!” Cauliflower was always the last vegetable I would eat in the pre-prepared vegetable trays from the grocery store. And it had to be submerged in ranch dressing.
Not anymore.
Howdy, friends! What a joyful week it’s been! There was a lot of work to be done, but a lot of progress made on the house as well. For starters, earlier in the week I had new windows installed!
At the end of the day, one of my favorite dishes is a big pile of spaghetti with tomato sauce and mozzarella. With zucchini soon reaching their peak season, it’s an easy transition to make this dish healthier. Replace the spaghetti with freshly spiralized zucchini (aka “zoodles”). Add a little creaminess and fresh basil to really enhances the flavor. It has become one of my favorite dishes on rotation!
