Quick Brie Bites

A couple years ago, I met my girlfriends at a coffee and wine bar. We laughed and talked for a few hours, all while sipping chardonnay and eating brie. Ever since that day, brie has reminded me of those good girlfriends. When I needed a last minute appetizer for a get together with those ladies, the nostalgic person inside of me wanted brie. Rather than bake an entire brie my boyfriend suggested bite sized brie hors d’oeuvres.

Game Day Chicken

Game Day Chicken || joyfully soDo you ever have a meal that you are still dreaming of the next day? That is how this dish was for me. Take several favorite foods – chicken, bacon, jalapenos, cheese – and coat it all with BBQ sauce as it cooks. Like jalapeño poppers taken to a new level. Game Day chicken is also delicious for a family dinner or sliced in smaller pieces for an appetizer. Enjoy one of my favorite foods in time for Super Bowl Sunday!

Every year after Thanksgiving, I find myself trying to find creative ways to eat the leftovers. Turkey soup, turkey sandwiches and turkey with BBQ sauce all go on rotation, in addition to the remaining side dishes. But between the leftovers, I try to mix in a few fresh and healthy meals and salads. This dish fits the bill!

Easy Pumpkin Dip

It wasn’t until junior year in college that I began to learn the greatness of pumpkins. I used to eat pumpkin pie mix straight from the can or with a little caramel topping in a bowl in my room for a meal – err, snack between classes. My mom is proud I have evolved since those days but I still value pumpkin and its ability to be deliciously transformed into a number of delectable treats.
